Lamb In Green Peppercorn Sauce

- 250 gm Foodland Chunky Bone In Cubes
- 4 tbsp oil
- 1-1/2 onion
- 3 cloves garlic
- 1 ½ cups stock
- 75 gm butter
- 75 gm refined flour
- 3 tsp wine
- 2 tsp green peppercorns
- 2 capsicums (green /yellow/red) -diced
- 3 tsp cream
- Salt and pepper - to taste
Marinate the lamb in salt and pepper and keep aside.
Sauté half the onion and garlic till it turns brown and then add the lamb and toss for 3 minutes. Keep Sauteed lamb aside.
Sauté remaining half of the onion and garlic, add the wine, & peppercorns. Add the lamb and cook for a minute. Pour in half the stock and boil the lamb for 20 minutes.
Heat butter till it melts, stir in the refined flour and mix till it gets a sandy texture this is the roux . Now add the remaining stock and stir continuously till it thickens and season with salt & pepper.
Add the cream and capsicums and cook for 3 minutes.
Serve hot with rice. (preferably cooked in Mutton stock for great flavour!)
